How to make breakfast cake

  • Butter a 10-inch springform pan, and line it with buttered parchment paper.
  • Combine butter, sugar, eggs, yogurt, almond and vanilla extracts. Mix well. Add flour, salt, baking powder, baking soda, and cinnamon and mix gently by hand. Do not over-mix.
  • Put the batter into the springform pan.
  • Toss the strawberries with the sugar (unless they are really, really sweet berries, you can use less sugar), and sprinkle over the cake.
  • Bake until toothpick inserted in the center comes out clean. Let cool and transfer to a cake plate.

The middle will be slightly soft and gooey. Dust with powdered sugar and serve!

The quiet, drab times of winter are a good time to bake a cake, plan a brunch, pull out a puzzle (I love doing a puzzle with a friend), finish a project, read a new book.

For me, I just made this Strawberry Breakfast Yogurt Cake Recipe.

We had friends in town over the weekend, so we invited them for breakfast one morning.

So fresh and delicious, I love this springform pan. Here’s my RED Nordic Ware Leak Proof Springform Pan, but you can also buy this adorable Heart Springform 10-Inch Pan (perfect for Valentine’s Day!)

Let it sit for at least an hour, as the center is very soft (but the best part).

ENJOY!

This cake is delicious! I used regular yogurt and it turned out great! Might have to freeze some of this so as not to eat it too quickly :-). Thanks for the recipe!

Can I make this in a different type of pan as I don’t have a springform? Just for hubby & me so it doesn’t need to have a pretty presentation.

    • Sandy

Yes, but you may need to adjust the baking time! :)

  3. KateReply

Looks delicious! Could you use frozen strawberries in this recipe?

  4. JoanieReply

Could you prepare the night before?

    • Sandy

Hi Joanie. Do you mean bake the night before? Yes. As for preparing the batter the night before, I have never tried this.

I saw your recipe this morning and had everything to make it, with a few modifications, and it is delicious! I only had berry Greek yogurt and sour cream, so I used both, omitted the cinnamon and added the zest of one lemon. I didn’t sugar the berries. SO GOOD! Thanks for the recipe.

I used 1/2 the amount of butter and Trader Joe’s brand white-wheat flour and it came out delicious. I needed to cook longer because the strawberries released so much liquid so I might try and cut the strawberries to 1 1/2 cups next time.

    • Sandy

      Thanks Kelly!

Could i yyse sour cream in place of yogurt?

    • Sandy

      Yes! :)

I’m all in for cake for breakfast!!

  9. JCEReply

I definitely will have to make this recipe. Will it only work in a springform pan? or is that just the best option?

    • Sandy

I have not tried it in any other pans. Use parchment paper for sure, and most likely the cooking time may change a bit. Come back and tell me how it turns out! :)

That looks yummy! Pinning it now. So true about pushing ourselves to do something different each day, something that pulls us out of the dreary weather that can bring on dreary moods. :/

    Love that springform pan too!
